Oven Roasted French Fries

2 pounds potatoes, peeled
1 tablespoon plus 2 teaspoons olive oil
3/4 teaspoon salt
1/8 teaspoon pepper

Instructions

Preheat oven to 425 degrees F. Carefully slice potatoes into julienne-size French fries. Place potatoes in a large bowl and drizzle with 1 tablespoon olive oil. Mix potatoes with a large spoon to evenly coat with oil. Spoon potatoes onto a large baking sheet. Season with salt and pepper.

Place potatoes in the oven for 15 minutes. Stir potatoes and roast for another 15 minutes. Remove potatoes from oven. In a large fry pan, place 1 teaspoon olive oil heat and saute half of the potatoes for approximately 4 minutes or until golden brown. Remove from fry pan and spoon onto serving dish. Cover to keep warm. Repeat with remaining oil and potatoes.

Makes approximately 7, 2.5-ounce servings
