Spray 13-inch round pizza or jelly roll pan with vegetable oil spray. Set aside. In blender or food processor, grate oatmeal and transfer to small bowl along with wheat germ. Mix together. Add honey and margarine and blend until crumbly. Pat crumbs evenly into pizza pan. Bake in oven for seven to eight minutes until crust is set. Cool completely.<\/p>\n<p class=\"style18\">Combine cottage cheese, light cream cheese, vanilla, and sugar in blender or food processor and blend until smooth. Note: For even consistency, it may be best to blend in batches. Once completely blended, gently spread cheese mixture over top of oatmeal crust. Leave a one-inch border around the edge. Cover carefully with plastic wrap and chill for at least three hours or overnight in refrigerator. Once cheese mixture is set, arrange sliced fruit in a decorative fashion on top of pie. Heat apricot preserves in small pot over medium to low heat, until a thin consistency results. Cool slightly.
