Blueberry and Orange Muffins


1-1/2 cups flour
2 teaspoons baking powder
1 cup sugar
1 orange, peeled and cut into slices
6 ounces custard-style orange cream yogurt
1 tablespoon fresh grated orange rind
3 tablespoons vegetable oil
2 tablespoons orange juice
2 egg whites
1 cup blueberries
vegetable oil spray


Preheat oven to 350 degrees F. Spray 12 muffin tins with vegetable oil spray and set aside. In a large bowl, combine flour, baking powder and sugar. Set aside. In a blender, puree orange. Add yogurt, orange rind, oil, and juice; blend. Fold in egg whites. Add liquid mixture to dry mixture and mix. Add blueberries and spoon batter into muffin tins. Bake for 25 to 30 minutes until cake tester placed in center comes out clean.
