1/2 cup mascarpone cheese
1/2 cup light cream cheese
2 tablespoons pasteurized dried egg white powder
1/2 cup water
1 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1 cup powdered sugar
12 fluid ounces strong coffee, cooled
24 ladyfingers
1 tablespoon cocoa


In a large bowl, combine mascarpone and cream cheeses and set aside. In a small bowl, combine egg whites and water. Let stand for 2 minutes and then add cream of tartar and vanilla. Using an electric mixer, beat on medium until foamy. Add sugar, one tablespoon at a time, beating on high, until all the sugar is used and firm peaks are formed. Fold egg white mixture into the cheese mixture. Set aside. Open ladyfingers and lay 1/3 of them, with the inside facing up, in the bottom of a 8 x 8 inch pan. Pour 1/3 of the coffee over the ladyfingers until soaked. Spoon 1/3 of the cheese filling over the ladyfingers. Dust with 1 teaspoon of cocoa. Repeat layers. Cover and refrigerate for at least one hour.
