The latest from the USDA shows that each American, on average, consumes slightly over 4 eggs weekly (including those in processed food), a decline of 11% as compared to higher amounts in 1970s. Eggs can be enjoyed as Greek-style poached eggs topped with yogurt or an omelet stuffed with vegetables and a sprinkling of feta cheese.
