At the traditional Mediterranean table, the bread basket was full, but margarine and butter were missing in action. Pasta, rice, couscous, polenta and potatoes were often mixed with vegetables and chickpeas, beans, and other legumes, serving up a plateful of nutrition. So, go easy on the meatballs and serve more pasta-tossed beans and veggies.
