More whole grains, fruits, vegetables, legumes, and nuts in the diet mean more fiber and less artery-clogging fat. At the traditional Mediterranean table, the bread basket was full, but margarine and butter were missing in action. Pasta, rice, couscous, polenta and potatoes were often mixed with vegetables and chickpeas, beans, and other legumes, serving up a plateful of nutrition.
